Ingredients

Method

  1. Whisk the dry ingredients. Separately whisk buttermilk, yolks and butter.
  2. Combine barely — lumps are correct. Overmixing is what makes them flat.
  3. Whip the whites to soft peaks and fold them through.
  4. Cook on a medium pan; wait for bubbles to open before turning.

Watch: shaping the dough

The shaping is the step everyone asks about. Everything else reads fine.
